I adore Farm Fresh RI – which is a non-profit that helps connect farms with markets and consumers. One of my favorite things that they do is their Veggie Boxes. Our first Winter Veggie Box was delivered today, and I squealed with delight when I opened the box and saw a bright Purple Cauliflower!

- Arugula: Wishing Stone Farm – Tiverton, RI
- Tatsoi: Langwater Farm – North Easton, MA
- Parsnips:Schartner Farm – Exeter, RI

Cauliflower

Keep in a plastic bag in the crisper for a few days
|
Spaghetti Squash and Potatoes
|
Store in the pantry for a couple of weeks.

Cabbage
|
Store in the refrigerator for a week. Eat soon after cutting because the flavor will diminish.
|
Arugula and Tatsoi
|
Store in a plastic bag in the refrigerator for a few days.
|
Celeriac
|
Remove stems and leaves and keep in a plastic bag in the refrigerator in the crisper for a couple of weeks.

So it looks like I’ll need to find a way to use the cauliflower, arugula and tatsoi within the first few days. Luckily, the veggie box also comes with recipe suggestions – because I am clueless on how to cook a celeriac!

Looks yummy! Our summer/fall farm share ended last week and I think we are in withdrawal. I wish we had thought of signing up for a winter box! Can't wait to see what delicious things you make with it 🙂
sounds great, I have never had this before, I like regular cauliflower "faux" potatoes, have you tried that. Sounds good to make with this kind of cauliflower too!
This is an awesome idea that I have never heard of before. We use arugula in our asparagus. Celeriac has a decent shelf life when stored right. My kids like it in soups.

I've never even SEEN a purple cauliflower. How unique. Very cool to get a box like that delivered.
I have been living off winter squash. Acorn, spaghetti, butternut. I just roast them up and eat with a little butter and cinnamon for lunch. Filling, healthy and delicious!
The purple is a bit nutty. SO GOOD!!!! We love squash and using it in everything from soups to spaghetti substitute 🙂
I have never seen purple cauliflower. I'm not much of a veggie person. Potatoes are about all that we have year round.
